this is one of my go-to baon when i am in a hurry or on a budget.
ingredients:
1 extra large egg (makes two sandwiches)
1 tablespoon light mayo
quick-melt cheese singles (i use laughing cow light)
optional: salt and pepper
your choice of bread (i used gardenia’s whole wheat pandesal)
procedure:
1. boil the egg for 10-15 minutes.
2. dice the egg to preferred consistency.
3. add light mayo and mix to preferred consistency.
4. optional: add salt and pepper to taste.
5. cut bread, put cheese and top with your egg spread. you may also use grated or cubed cheese as part of the egg spread itself.

if you are planning to learn how to cook or have just started getting acquainted with the kitchen, i suggest you try experimenting with eggs first. boil them, poach them, fry them, beat them, whichever way you want them. once you have perfected the basic egg recipes, you can think of simple ways to spice them up. one way is through presentation, just like what i did with this fried egg. i turned my sunny side up into a hearty meal.
ingredients:
eggs
cooking oil
salt and pepper
must-have tool:
heart-shaped pancake shaper
procedure:
1. pre-heat the pan for 30 seconds.
2. pour 3 tbsp of cooking oil on the pan. heat for another 30 seconds.
3. rub a little amount of oil or butter on the rim of the shaper and place it on the pan.
4. break the egg on top of the pan and let it fall directly on the shaper.
5. add salt and pepper to taste.
6. when the color of the bottom of the egg starts to turn brown put the stove on medium fire. using a slotted turner, scoop the cooking oil and pour on top of the egg in order to cook both sides.

this is very easy and does not involve much cooking.
ingredients:
2 pcs pork steak
1 cup barbecue marinade mix (i use mama sita’s)
1 bowl of lettuce, sliced
2 medium tomatoes, sliced
2 tbsp white vinegar
salt
pepper
procedure:
1. marinate the pork steak in a sealed container for at least 30 minutes.
2. grill (or fry) the pork steak and then cut into strips. set aside. (i want my pork well done so i poke it with a fork to make sure it is cooked.)
3. in a separate container, mix the vinegar with salt and pepper to taste. set aside.
4. in a bowl, mix the lettuce and tomatoes. add the vinegar mixture. toss and then top with the pork strips.

i made this recipe (if something as simple as this can be called as such) for 15 people but i decided to include this here because i just learned to cook hotdogs without wrinkles (thanks to my friend, jeanne, for the tip)!
ingredients:
hotdog cocktails
marshmallows
water
cooking oil
procedure:
1. remove the plastic covering of the hotdogs before washing.
2. fry the hotdogs in two (2) cups of boiling water with a tablespoon of cooking oil. add water and oil as necessary until the hotdogs change color (meaning they are cooked).
3. plate the hotdogs and marshmallows using barbecue sticks.

this is the first pasta dish i cooked, mostly using my sister’s recipe with some adjustments to suit my (and kim’s) taste.
ingredients:
200g pasta (i used penne)
1/2 can evaporated milk, small (i use carnation)
1/2 cup all-purpose cream
1/2 cup bacon, cut into squares (or ham)
1 medium onion, sliced
4 garlic cloves, crushed and then minced
1/4 cup parmesan cheese
2 tbsp bacon bits
basil, salt and pepper
procedure:
1. cook the pasta in boiling water with a pinch of salt and drop of oil. drain and then set aside.
2. saute the garlic and onion.
3. add the bacon (or ham) until cooked.
4. add the all purpose cream, milk and parmesan cheese. simmer until it thickens and then add salt and pepper to taste.
5. pour the mixture on the cooked pasta.
6. garnish with parmesan cheese, basil and bacon bits.

ingredients:
2 pcs fish steak (i use tanigue or tambakol)
1 egg, beaten
1 cup dry bread crumbs
5 medium potatoes, cut into thin slices
2 tbsp mayonnaise
1 tsp mustard
sugar
salt and pepper
procedure:
1. rub salt and pepper on the fish. set aside.
2. season the potatoes with salt and pepper.
3. fry the potatoes. set aside.
4. mix the mayonnaise and mustard. add a pinch of salt and sugar. set aside.
5. dip fish into a bowl of beaten egg.
6. cover the fish with dry bread crumbs.
7. fry breaded fish into pre-heated cooking oil. simmer for 5-10 minutes or until the bread crumbs turn golden brown.

this is the first fish dish i cooked, in an effort to eat healthy. even before the movie finding nemo came out, i have lived by the principle that fish are friends—not food. when asked why her youngest daughter doesn’t like to eat fish, my mother would say in between laughs that it’s because i pity them.
ingredients:
2 pcs fish steak (i use tanigue or tambakol)
1/2 can evaporated milk, small (i use carnation)
1 baby carrot, cut into thin slices
1 medium red bell pepper, sliced into squares
1 medium onion, sliced
4 garlic cloves, crushed and then minced
1 tbsp ginger, cut into thin slices
1 tbsp sweet and sour mix (i use del monte)
salt and pepper
procedure:
1. rub salt and pepper on the fish. set aside.
2. dissolve sweet and sour mix in 1/4 cup of water. set aside.
3. fry the carrot and red bell pepper. set aside.
4. saute garlic, onion and ginger.
5. add fish and sweet and sour mix. simmer for three to five (3-5) minutes or until the flesh turns white or golden brown, whichever way you want your fish cooked.
6. add carrot and bell pepper.
7. add evaporated milk. simmer until it thickens.

this is the first ever real food that i cooked. i was inspired by my former supervisor when i was still working in the office of the president. she would often bring lunch for all four of us in the office. and her chicken curry was one of the best i’ve ever tasted. when i resigned, i found myself missing her cooking, particularly her chicken curry, so i tried making my own.

ingredients:
1/4 kilo chicken (i use breast fillet, cut into small portions)
1 cup chicken broth
1/2 can evaporated milk, small (i use carnation)
1 medium potato, cut into cubes (i use baby potatoes - 4 pieces - they are cute easier to slice)
1 baby carrot, cut into cubes
1 medium red bell pepper, sliced into squares
1 medium onion, sliced
4 garlic cloves, crushed and then minced
1 tsp ginger, minced
1 tbsp curry mix (i use mccormick®)
salt and pepper
procedure:
1. boil the chicken, adding a pinch of salt and a drop of lemon juice on the water. when done, set aside both the broth and the chicken.
2. fry the potatoes, carrot and red bell pepper. set aside.
3. saute garlic, onion and ginger.
4. add chicken, salt, pepper and curry mix.
5. add chicken broth. simmer for three (3) minutes.
6. add potatoes, carrot and bell pepper.
7. add evaporated milk. simmer until it thickens.
suggestion: serve hot with garlic fried rice. :9
remember: you can always adjust the ingredients to suit your taste. for example, if you want your broth creamier, add more milk or if you want your chicken spicier, add more pepper, ginger or curry mix.

when i started cooking, everything was just for myself so there’s not much pressure to talk about. how my food turned out didn’t matter because i had no choice but to eat whatever meal came out of my kitchen experiments. as they say, love your own. (and also, don’t waste anything and save your allowance.)
and then my boyfriend started requesting that i cook for him. the first time i agreed, i had only one condition: you asked me to cook, so you better be sure you’d finish whatever i cook. (i made scrambled eggs, by the way. and it came out too salty. ha-ha-ha!)
the rest as they say is history, and now my boyfriend genuinely loves everything i cook. he begs me to cook for him and he gets excited when i tell him that i would. so, i got used to making meals for two even when he’s not around (his share becomes my baon or is re-heated for another meal of the day), hence the title of this blog.
so here, i would be posting my recipes, which are combinations of stuff i read on books in my trips to powerbooks (up to this point, i don’t own any recipe book because the good ones are expensive. poor me.) i also get tips from my sister and mother, cooking shows on television, cooking games on my iphone (seriously!) and, of course, the internet. in the process, i hope to meet other cooking devotees and learn from them.
